There are some meals that are surprisingly simple, thrown together with whats on hand, and eaten out of a bowl with a spoon sitting in front of the TV. This Lemon Orzo Pasta with Salmon is spring in a bowl that takes only 30 minutes to make! Orzo pasta comes together with Mint, Lemon, Dill, Parm, and is topped with quick easy broiled Salmon. Perfect for a quick easy weeknight meal! I love when a simple meal brings a YUMMM out of my mouth and a smile to my face.
Meal Prep has been keeping me sane these days, even as my routines have changed. I’ve broiled a big batch of salmon twice now and used it to add to dishes over the week: in salads, with eggs for breakfast, on avocado toast, or in pasta!

How to Broil Salmon
- Set up the oven rack so the rack is on the top rail, under the broiler plates.
- Drizzle 1 teaspoon of olive oil over top of the salmon, and add salt and pepper to taste.
- Once the salmon is seasoned, place the salmon on a foil sheet on a cookie sheet.
- Broil it for 10-15 minutes (depending on how thick the pieces are). Be sure to check the salmon every 2 minutes towards the end to ensure that it isn’t burning.
- Let the fish cool completely before you store it, it will keep in the fridge for up to 5 days (if it lasts that long!)

Lemon Orzo Pasta with Salmon
Spring in a bowl that takes 30 minutes to make! Orzo pasta comes together with Mint, Lemon, Dill, Cheese, and is topped with quick easy broiled Salmon. Perfect for a quick easy weeknight meal!
Ingredients
- 1 box orzo pasta
- 6 8oz salmon filets
- 2 cups frozen peas (or more)
- 3 Tbsp fresh dill
- 1+ Tbsp fresh Mint
- Juice of 1 lemon (more or less depending on what you prefer)
- 1/4 cup good quality extra virgin olive oil
- Salt and Pepper
- Parmesan cheese
Directions
- Cook the pasta according to the box with heavily salted water.
- As the pasta water comes to a boil, prepare the salmon for broiling. Set up the oven rack so the rack is on the top rail, under the broiler plates.
- Drizzle 1 teaspoon of olive oil over top of the salmon, and add salt and pepper to taste. Once the salmon is seasoned, place the salmon on a foil sheet on a cookie sheet.
- Broil it for 10-15 minutes (depending on how thick the pieces are). Be sure to check the salmon every 2 minutes towards the end to ensure that it isn’t burning.
- Once the pasta has cooked, strain it (reserving a small amount of pasta water) but do not rinse! Pour the pasta into a large bowl. Add in the frozen peas and mix around, they will thaw with the warm pasta.
- Add in the dill, mint, EVOO, salt and pepper, lemon juice, and mix together. Add cheese and have one final taste!
- To serve, dip the pasta into bowls and top with a piece of the salmon, skin removed! If you want to get fancy, you can take a lemon slice or lemon peal for garnish. ENJOY!
