Let me tell you a story about this Salmon Salad with Tarragon Dressing. In my family its known as “Mary’s Salad” and has been around since I was in High School. An old family friend, Mary, made this back in the day and it was an instant staple for my family. My mother is the one who makes it now (well she delegates to me to make it when I’m home). I have yet to get tired of it, and it literally goes with any type of meal! Christmas✔️ Easter✔️ Sunday dinners✔️ Special Requests✔️ Tuesday’s ✔️
With all that said, can you believe this is the first time I’ve made Mary’s salad in my own home? It doesn’t taste the same, I think its missing the love it gains when being shared with others, but I’ll take it non the less. I added Salmon and Avocado to make it a full meal.

Tarragon Dressing
The Tarragon Dressing is so light and flavorful, and can be made with a few simple ingredients.
Mix the following in a mason jar and shake away:
- 1 tsp dry mustard
- 1/2 tsp Worcestershire sauce
- 1/2 cup veg oil
- 1/4 cup sugar (or honey)
- 1/4 cup tarragon vinegar
- 2 tsp parsley (fresh preferred, but dried works)
- Salt and pepper
- 1/4 red onion sliced thin
How to Broil Salmon
- Set up the oven rack so the rack is on the top rail, under the broiler plates.
- Drizzle 1 teaspoon of olive oil over top of the salmon, and add salt and pepper to taste.
- Once the salmon is seasoned, place the salmon on a foil sheet on a cookie sheet.
- Broil it for 10-15 minutes (depending on how thick the pieces are). Be sure to check the salmon every 2 minutes towards the end to ensure that it isn’t burning.
- Let the fish cool completely before you store it, it will keep in the fridge for up to 5 days (if it lasts that long!)

Salmon Salad with Tarragon Dressing
A light salad that pairs well with almost any meal! Bibb lettuce, mandarin oranges, almonds, avocado, and salmon are tossed with a flavorful tarragon dressing making the perfect summer dinner salad!.
Ingredients
- 2 lb Salmon, broiled
- 2 heads of Bibb Lettuce (or spinach, looking for soft leaves)
- 2 11oz cans of Mandarin Orange Slices, drained
- 1/2 cup Toasted Slivered Almonds
- 1 ripe Avocado, diced
- 1 tsp Dry Mustard
- 1/2 tsp Worcestershire sauce
- 1/2 cup Veg Oil
- 1/4 cup Sugar (or honey)
- 1/4 cup Tarragon vinegar
- 2 tsp Parsley (fresh preferred, but dried works)
- Salt and pepper
- 1/4 Red Onion sliced thin
Directions
- Hand tear the lettuce into a big bowl.
- Add all ingredients for the salad dressing in a mason jar and shake shake shake!
- Layer on the oranges, avocado, almonds, salmon, and toss with the dressing! Enjoy!
Note:
– Toss the salad with the dressing right before serving, only toss what you are going to eat because the dressing will wilt the lettuce as it sits.
– The dressing can be made in advance.
