Alright Y’all, this post goes out to my friend Katie Dixon. She is the one who introduced me to this meal and I have not been able to stop making it for months! MONTHS! This sweet potato hash breakfast bowl, as I have come to call it, is a staple for breakfast now. It is so versatile you can make any version of it by using the base of just a few ingredients: Sweet Potato, Onion, Spices, Pesto, and a Fried Egg.

Katie and I met in our apartment complex last year. We live at the end of the hall, my apt is on one side of the hall and she is on the other. We joke and call our living situation “the dorm” because we leave our doors open and are constantly at each others places feeding one another or borrowing/ giving advice. Work, Men, Family, Relationships, Food, you name it.
When Covid hit, she was my quarantine buddy and without her those first few months would have been so much worse than they were. We would walk everyday and chat, and because of that we got to know eachother very well. Katie is someone who will give you the last of their food or whatever you need even if it leaves her down and out. But that’s what makes her such a great friend, I am blessed to have her in my life.
One morning she texted me and said “Hungry? I made extra breakfast.” That was quickly followed with “its diet food so no judgement.” I thought I was going over to eat a bowl of carboard but instead she handed me this sweet potato hash breakfast bowl and WOW. Just WOW. For diet food, this is one for the books! Flavorful and healthy, great start to a long day.

To start, you grate a sweet potato on a box grater and throw it in a pan with some olive oil salt and pepper. Then chop some onions, I’ll even use the box grater and grate the onion to make it easy, less clean up too! Toss the onions in with the sweet potatoes and Sautee. Add in some simple spices including garlic powder, onion powder, paprika, salt, pepper, and I like to add a few red pepper flakes for a kick. Sautee this on med/ high heat for 5 minutes or until you can tell the potatoes have cooked, its quick!
Transfer the sweet potato into two bowls (1 potato normally makes 2 bowls) and start frying a couple eggs. I do this in the same pan as the sweet potato’s, hello can you say EASY RECIPE! Top each bowl of sweet potato hash with an egg and any additions you may want (below). Then add a spoon full of Pesto (whatever kind you have) and you will be instantly hooked like I was.

Simple, easy, and super healthy for you. This sweet potato hash breakfast bowl provides great fuel for a workout or a long day doing house/ yard work. I use a whole sweet potato and save 1/2 of it for tomorrows breakfast. I will fry the egg to order but the sweet potato and onion keep very well in the fridge.
