Summer is coming and I can not be more excited to bring fresh fruit into my daily cooking routine! This Pineapple Avocado Salsa is bringing the warm flavor back into my life!
A lot of recipes I come up with originate with me standing in front of my refrigerator and seeing what I have to work with, this one was no different.
As summer approaches, I’ve been finding myself stocking up on fresh fruit and loads of fresh herbs! I just picked up a huge sweet pineapple and some perfectly ripe avocados and a bunch of cilantro and bam! Pineapple Avocado Salsa.

What resulted was a meal that came together quite nicely, and I assure you its just as easy on the pallet as it is on the eyes! To start, I took a fresh pineapple and diced it real small. I diced the ripe avocado to be the same size as the pineapple and then added some salt, heat, acid, and fat.

For the heat, I diced up a jalapeno after taking out the seeds – I like a hint of heat but don’t want it to overpower the other flavors! I then threw in some cilantro and chopped shallots (you can use red onion if you don’t have shallots) and finished it by tossing the lot with a lime vinaigrette.
For the acid and fat, I whisked together some lime juice (acid), grapeseed oil (fat), a dash of honey, and salt and pepper. You can whisk this first in the bowl you will be making the salsa in or pour it over the mix and toss! After mixing all the ingredients together, I tasted for seasoning and having a couple, if not a few, spoon fulls to “make sure it tasted just right”.

This Pineapple Avocado Salsa recipe is amazing alone with some tortilla chips, you can also use it to top fish tacos, or what I did was pan fry some salmon with cumin and smoked paprika and used the fish as a base for the salsa to sit on! Your choice, you can’t go wrong 😊

Pineapple Avocado Salsa
A fresh, light, summer inspired salsa recipe perfect for topping grilled summer dishes or eating with chips!
Ingredients
For the Salsa
- 2 cups small diced fresh pineapple
- 1 large ripe avocado
- 1 jalapeno
- ¼ cup loosely chopped cilantro
- 1 small shallot or ¼ cup diced red onion
For the Vinaigrette
- Juice of one lime, or more to taste
- 2 TBS grapeseed oil (any light vegetable oil)
- 1 tsp honey
- Salt and pepper to taste.
Directions
- Mix together the pineapple, avocado, jalapeno, cilantro, and shallots in a bowl.
- Whisk together the ingredients for the vinaigrette and toss with the salsa base
- Taste for flavor and adjust the salt and pepper as needed.
Top your favorite grilled fish or chicken, have all by itself with some chips, or add some flare to your next taco Tuesday and enjoy!
